Delicious Nettle Recipe

The first stinging nettles are starting to pop up! A renowned wild food delicacy, their sting is neutralized by cooking (wear gloves when harvesting!). Here is Corinna's favorite way to bring nettles into her kitchen...

Nettle cream soup 600 x 400Rich Russian Nettle Tonic

4 cups stinging nettle tops
1 cup water
2 cloves garlic
1/2 cup sour cream
salt to taste

Cook fresh nettles in water, well covered, 10-15 minutes, until tender. 

For sauce: Drain well, then blend, or run through a food processor with garlic and sour cream (or yogurt). Serve immediately over rice, noodles, toast or vegetables.

For soups: Blend nettles, cooking water, garlic and sour cream. Reheat gently.

Preparation time: This is a quick dish, taking only 20-25 minutes, so you can spend your time in the nettle patch instead of the kitchen. Though lush and rich, this tonic gives you get-up-and-go.
